feat(tests): add interaction snapshots and align test workflows

Summary

• Add SnapshotTesting coverage for tap gestures and observed state changes, using SwiftUI reference images to verify OpenSwiftUI rendering.
• Rename UX tests to interaction tests, with a separate target, matching schemes, and a shared interaction tag.
• Align UI and interaction CI configuration options, test filters, failure checks, and artifacts. Record interaction references only when an update is requested.
• Move example tests, reference images, and shared helpers into Example/Tests, and remove the legacy Xcode project.

Both interaction suites and all nine snapshot comparisons pass on macOS 26.6.2 and iOS Simulator 18.5 with the Compute backend. The macOS test host uses a fixed 400×400 content area for consistent screenshots.
