Assessment mode on macOS 27

This feature request marks the wish for support for macOS 27's new Assessment feature in SEB, to better support standardized testing and/or student lab assessments.

Describe the solution you'd like
With macOS 27 comes a built-out assessment feature that theoretically would be a nice match for SEB, since it should be able to take advantage of many of the new features to provide for an accessible, safe and properly locked down assessment session.

The Automatic Assessment Configuration (AAC) Assessment Mode is since long supported with SEB for macOS (and iOS). Until now it was optional, so you had to change the default configuration (see Security pane in Settings).

You can already now use Multi-App mode, but the new features in macOS 27 will make it even more powerful and useful. For example I will be able to restrict file choosers to a specific (temporary) directory, currently SEB has to prevent the file chooser to be displayed at all. Probably most importantly, the menu bar will be usable now in AAC.

I can't officially take credit, but I filed feature requests for all these enhancements a few years ago and discussed this repeatedly with Apple. Happy we could contribute to improving assessments with Apple devices also for other apps using AAC.

We will implement support for the new macOS 27 features as soon as possible. Check out the releases page here on GitHub before fall for SEB beta versions with support for these features.
