feat: support ethrex and nimbus-eth1 execution clients - #150

Bumps ethereum-package-go to a pseudo-version off ethpandaops/ethereum-package-go#18 which adds client.Ethrex and client.NimbusEth1 + a MarshalYAML translating the "nimbusel" alias to the "nimbus" wire name upstream expects. Also recognises ethrex in the client log streamer's EL emoji switch. Re-pin ethereum-package-go to the tagged release once #18 ships.
