chore(website): point the desktop download at desktop-v0.12.1 - #627

Skips desktop-v0.12.0 on purpose: that release has no macOS build (signing failed on the runner's keychain step), so the Mac buttons would 404. Verified the four names the page builds exist in desktop-v0.12.1 and serve (HTTP 206 on a range request): AgentGem-0.12.1-arm64.dmg, AgentGem-0.12.1.dmg, AgentGem-Setup-0.12.1.exe, AgentGem-0.12.1.AppImage. The arm64 app inside the dmg passes spctl as a Notarized Developer ID with a stapled ticket. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
