Trim helm deployment section to point at chart docs#89

Helm chart versions >= 0.20.0 default to the Posit images published in this repository, so the in-README values.yaml example duplicated the chart docs and pinned overrides that are no longer needed. Strip the inline example and link out to docs.posit.co for chart usage and to the image migration guide for upgrades from earlier chart versions. - README: replace the Kubernetes section's helm repo / license / values / install walkthrough with a short pointer to the chart docs plus a note about the content image tag pattern. - connect-content-init/README: drop the launcher.defaultInitContainer override snippet; mention the chart default and migration guide.
