docs(vendor): remove Beta label from the custom metrics page#4196

Custom Metrics (via the Replicated SDK) is moving to GA after 2+ years of vendor use. Drop "(Beta)" from the Configure custom metrics page H1; the sidebar label derives from the title and updates automatically. SDK version references (1.0.0-beta.x) are unchanged, and the historical app-manager release-note link is left as-is.
