Add Probalytics to Commercial & Proprietary Services

Adding Probalytics (https://probalytics.io) to the Commercial & Proprietary Services section.

Probalytics is prediction market data infrastructure for Polymarket and Kalshi - REST API with unified schema, ClickHouse SQL access, 200–500M orderbook snapshots/day at 1ms resolution, and Parquet bulk exports.

Thanks for the contribution! A couple of things to address before we can merge:

1. Section placement: The entry was added to the "Related Lists" section but should go under "## Commercial & Proprietary Services" (around line 571). Please move it there.

2. Missing language tag: The entry format requires a language tag in backticks. Please add one, e.g., `API` or `Python`.
